
# New Research: What UK Studies Reveal About the Link Between Iodine Intake and Thyroid Health
Most people can name at least a handful of nutrients they keep an eye on — protein, iron, vitamin D. Iodine rarely makes the list. Yet without enough of it, your thyroid — the small gland that quietly governs your metabolism, energy levels, and mood — simply cannot do its job.
The problem is that iodine deficiency isn't ancient history. In the UK, it's making a quiet comeback, and the research is worth paying attention to.
The thyroid gland uses iodine to produce two key hormones: thyroxine (T4) and triiodothyronine (T3). These hormones regulate how your body uses energy, how fast your heart beats, how well you sleep, and even how clearly you think.
When iodine intake is consistently low, the thyroid can't produce enough hormone. The result is hypothyroidism — a condition associated with fatigue, weight gain, brain fog, and low mood. In pregnant women, severe deficiency can affect foetal brain development, making iodine one of the most critical nutrients during pregnancy.
What makes iodine unusual is that your body can't make it. Every microgram has to come from food or supplementation, and the amount in food depends heavily on where that food was grown or produced — which means iodine status is genuinely a public health concern, not just an individual one.
For much of the 20th century, the UK's iodine status was considered adequate, largely because the population consumed significant amounts of dairy and white fish — both reliable iodine sources. Milk, in particular, has historically been a major contributor to UK iodine intake, partly because iodine-containing disinfectants are used in dairy farming.
But dietary habits have shifted. Milk consumption has declined, plant-based milk alternatives have grown in popularity, and fish intake across the population remains lower than recommended. These changes have quietly eroded the iodine content of the average British diet.
The UK does not have a mandatory iodine fortification programme — unlike the United States, which fortifies table salt, or several other countries that fortify bread or flour. This means UK residents are almost entirely dependent on dietary sources, with no safety net.
The most significant body of UK evidence on iodine status comes from a series of studies led by researchers at the University of Surrey and the MRC Epidemiology Unit in Cambridge.
A landmark study published in The Lancet in 2011 tested urine samples from over 700 schoolgirls across the UK and found that two thirds were iodine deficient — placing the UK among the most iodine-deficient countries in Europe. This was a striking finding given that iodine deficiency is often associated with developing nations, not wealthy ones with well-developed food systems.
More recent data from the National Diet and Nutrition Survey (NDNS) — the UK government's ongoing dietary surveillance programme — has continued to identify iodine as a nutrient of concern, particularly in adolescent girls, women of childbearing age, and those following plant-based diets. The NDNS data consistently shows that a substantial portion of the UK population falls below the Reference Nutrient Intake (RNI) of 140 micrograms per day for adults.
A 2020 study published in the British Journal of Nutrition specifically examined iodine status in vegans and vegetarians in the UK. It found that vegans had significantly lower urinary iodine concentrations than meat-eaters and fish-eaters, and that the majority of vegan participants fell into the deficient category. The study raised particular concern about iodine intake during pregnancy for those following plant-exclusive diets.
It's worth noting that the research isn't entirely alarming — some studies suggest that iodine status in certain UK population groups remains adequate. But the consistent pattern across multiple surveys points in one direction: many people in the UK are not getting enough.
The evidence points to a few groups who face the highest risk of iodine insufficiency.
Women of childbearing age and pregnant women are the most discussed in the literature. The RNI for iodine rises to 200 micrograms per day during pregnancy, and the consequences of deficiency at this stage — including impaired cognitive development in the child — are well-documented. UK health authorities, including NICE, recommend that pregnant women consider iodine supplementation, though awareness of this guidance remains low.
Adolescent girls have repeatedly appeared in the data as a high-risk group, partly because dairy avoidance is more common in this demographic and partly because their bodies are still developing.
People following plant-based diets face a structural challenge. The most iodine-rich foods — dairy, white fish, and seafood — are either reduced or eliminated entirely. Plant-based milks, unless specifically fortified, contain very little iodine compared to cow's milk. Checking the label on your oat, almond, or soy milk is genuinely worthwhile: some brands now add iodine, many don't.
Those who avoid iodised salt or eat little processed food may also be at risk. Ironically, people eating what would typically be considered a "healthy" diet — low in processed foods, high in whole plants — may be missing out on the small amounts of iodine that do appear in some fortified and processed products.
One persistent belief is that using sea salt or Himalayan pink salt provides a meaningful source of iodine. It doesn't. These trendy salts contain only trace amounts — far less than iodised table salt and not enough to make a meaningful contribution to your daily intake.
Another misconception is that seaweed is a reliable iodine fix. Some seaweed, particularly kelp, does contain iodine — but in highly variable and often extremely high amounts. Consuming seaweed regularly can actually carry a risk of iodine excess, which causes its own set of thyroid problems. The British Dietetic Association advises against relying on seaweed as a primary iodine source for exactly this reason.
Finally, iodine deficiency doesn't always produce obvious symptoms in the short term. Mild deficiency can be entirely silent for months or years while gradually affecting thyroid function — which is part of why the UK data has caught researchers off guard.
The good news is that meeting your iodine needs isn't complicated once you know which foods actually deliver it reliably.
Cow's milk and dairy products remain the most consistent iodine source in the UK diet. A 200ml glass of semi-skimmed milk typically provides around 50–60 micrograms of iodine — nearly half the adult RNI in a single serving.
White fish — cod, haddock, plaice — are excellent sources. A 100g portion of cod provides roughly 100 micrograms, well over half the daily target.
Eggs contribute a useful amount, particularly the yolk. Two eggs provide around 50 micrograms.
Seafood including prawns, mussels, and scallops are solid options for those who eat them.
If you follow a plant-based diet or consume little dairy and fish, it's worth looking for a supplement that includes iodine — ideally from potassium iodide rather than seaweed extract, which carries the variability problem mentioned above. Many standard multivitamins include iodine, but checking the label is essential.
During pregnancy, a supplement containing 150 micrograms of iodine is widely recommended by dietitians, in addition to dietary sources.
